Date Night Cookie Making With Help From Mighty Nut PB & Giveaway!
/The wife and I both have wicked busy schedules so we squeeze in date nights when we can. Last night we attended a screening for a new TV show on Starz "Ash vs Evil Dead." They had a green screen with props... so of course we took advantage!
Tonight we wanted to stay in and bake cookies.
Okay okay we all know I can't cook so let me rephrase that! I would be buying the supplies and documenting, while the wife did the actual baking. See win-win. :P
We get edible cookies and quality time together.

While I finished up a run on the treadmill, the wife collected all of our necessary ingredients. Now I made the wise decision to use Special Dark chocolate chips over regular old chips. I know I know I am amazing! You are welcome my friends.
Ingredients:
- 1 stick butter, softened
- 1/2 cup brown sugar, firmly packed
- 1 cup all-purpose flour
- 4 tablespoons Might Nut powdered PB
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 1 cup special dark chocolate chips
Directions:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large mixing bowl, add the butter and sugar. Using a stand mixer (or hand mixer), beat until the butter and sugar have creamed. Add in the remaining ingredients, and mix until a soft dough forms.
- Using a cookie scoop drop the cookie dough on the baking sheet and bake the cookies for 10-12 minutes or until golden brown. Remove from the oven and allow to cool.
While we figured we could make 24 smaller cookies or 12 large, we went with the larger size. We only live once, right? When the dough went into cookie balls (giggity), we ended with 13 so we had to share a raw cookie dough ball. Mmm... I could not remember the last time I ate raw cookie dough.
You know I think the wife made this recipe easy enough that even I could cook them. Maybe I will try it one time.

These cookies were extra peanut buttery and I loved it.
